MY EASY AND REFRESHING BELLINI RECIPE


Not a heavy cocktail kind of girl? I've got just the thing for you and right in time for the long holiday weekend. If you're no bartender and don't want to spend the time to be either, this drink is for you. The only caveat here is that you need to like peaches; other than that these are pretty much the most universally loved and delicious drinks. In my opinion, what makes all the difference is the fresh peach puree, just like they do it any *good* Italian bar. Whip up a batch for yourself, or for guests and trust me - it's a crowd pleaser.

You'll need (for 4 servings):
-1 bottle of Prosecco, I like Mionetto 
-2 ripe peaches

Slice up the peaches, and if you want a tart kick to your drink, leave skin on some of your slices. Then put your fruit into a blender and add a couple of ice cubes for chilling purposes. Ration out the prosecco into four glasses, preferably chilled in the freezer for an hour prior to making. It's important to add the peach puree after the prosecco due to density reasons, so add that in after. Now drink up!

This is almost too easy. It seems a bit ridiculous that I'm even posting a recipe for this, but I figured it's a fresh idea and I've been loving these lately - especially after having them nonstop in Italy a few weeks ago. Happy 4th of July weekend!
